Sweet Potato and Apple Salad

A taste fall salad!

Serves: 7

Ingredients: 

  • 2 cups sweet potatoes, cut into 1/3-1/2" cubes
  • 1 cup Granny Smith apples, unpeeled, cored, and chopped into 1/3-1/2" cubes
  • 1/2 cup thinly sliced sweet onions (sliced into rings)
  • 1/4 cup raisins
  • 1 tsp Dijon mustard
  • 1 Tbsp apple cider vinegar
  • 1/8 tsp kosher salt
  • 1/8 tsp ground black pepper
  • 4 Tbsp extra virgin olive oil
Instructions: 
  1. Toss sweet potatoes with 1/2 Tbsp olive oil, place on baking tray, roast at 425 degrees F until potatoes are tender when pierced with a fork - about 15 minutes. Do not over cook. 
  2. While potatoes are roasting, heat 1/2 Tbsp olive oil in a medium saute pan, add thinly sliced onions and gently cook on medium-low until translucent and soft. Onions should not be brown. 
  3. In a small bowl, whisk together honey, mustard, vinegar, salt, and pepper. Drizzle in remaining 3 Tbsp olive oil to emulsify dressing. 
  4. Combine sweet potatoes, apples, onions, and raisins. Pour dressing over top of salad and toss to combine.
