Cilantro Black Barley Tabouli

A filling side dish with fresh flavors

Servings: 8

Ingredients: 

  • 1 cup black barley
  • 1 cup fresh chopped cilantro
  • 1/2 cup fresh diced red onion
  • 1/2 cup diced cucumber (1/4-1/3" dice)
  • 1/3 cup chopped tomatoes
  • 3 tsp extra virgin olive oil
  • 3 tsp fresh lemon juice
  • 1/8 tsp cinnamon
  • 1/8 tsp sea salt
  • 1/8 tsp cracked black pepper
Directions: 
  1. Prepare black barley according to package directions. For additional flavor, use low sodium vegetable broth in place of water to cook barley. Let cool to room temperature.
  2. Combine the remaining ingredients with barley and adjust seasonings to taste. Best served at room temperature. Refrigerate leftovers, flavors will meld nicely.
